Oatmeal Pancakes

altI made pancakes twice this past weekend. Practically flourless, these hearty pancakes are my favorites for breakfast with company. I make them for “just us”, too.  We like them with maple syrup or honey, sometimes topping with fruit such as bananas, strawberries, or blueberries.  A dollop of yogurt is great, too. Leftovers can easily be reheated in the toaster and are perfect with a smear of natural peanut butter and a drizzle of honey.

The version I use is from AllRecipes.com.  You’ll find the exact same recipe on several sites, but the reviews on AllRecipes.com go back to 2003.  I can’t find anything documented earlier than that, so I’m officially going with this version.  I personally have never added the raisins and am labeling them as optional.


Overnight Oatmeal (Raisin) Pancakes
(Serves 4)

2 cups quick-cooking oats
2 cups buttermilk
1/2 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon (sometimes I increase it to 3/4 tsp)
1/2 teaspoon salt
2 eggs, beaten
1/4 cup butter, softened (or melted)
1/3 cup raisins (optional)

1. In a medium bowl, mix together the oats and buttermilk. Cover, and refrigerate overnight*.

2. The next morning: In a large bowl, sift together the flour, sugar,
baking powder, baking soda, cinnamon, and salt. Make a well in the
center, and pour in the oatmeal mixture, eggs, butter, and raisins.
Stir until just moistened. Allow batter to sit 20 minutes before
cooking. If batter is too thick, add buttermilk 1 tablespoon at a time,
until the batter reaches the desired consistency.

3. Heat a lightly greased, large skillet or griddle over medium heat. Pour
1/4 cup batter onto the hot griddle for each cake. Cook pancakes until
bubbles appear on top, flip, and cook until lightly browned on bottom.

*Amy’s Note: If you forget to do this step the night before, microwave oats and buttermilk for two minutes at half power, stirring at least once.  This will slightly soften the oats and warm the buttermilk to prep them for the next step.
