Graham Cracker Toffee Bars

Here’s another favorite Christmas treat.  I don’t remember when my mom started making these, but she usually included them in the goodie trays she would give to neighbors and friends.  She even packed them in our take-along lunch for the long drive from North Dakota to Iowa to visit relatives for the holidays.  They are very sweet!  (Not that there’s anything wrong with that.)

1 cup (2 sticks) butter
1 cup light brown sugar, packed
1 cup pecans, coarsely chopped
12 large graham crackers, broken on the lines into 48 small crackers
8 1.55 oz. milk chocolate candy bars, broken into pieces (or 2 cups semi-sweet chocolate chips if you prefer darker chocolate)

1. Preheat oven to 350 degrees.

2. Arrange graham crackers in the bottom of a 15 1/2 by 10 1/2 inch jellyroll type baking pan.

3. In a medium saucepan, combine butter and brown sugar.  Over medium heat, bring to a boil.  Reduce heat to low and cook for 5-6 minutes, stirring occasionally.

4. Remove from heat and stir in chopped pecans.  Pour mixture over graham crackers.  Spread evenly.

5. Bake at 350 for 9-10 minutes.

6. Remove from oven to cooling rack.  Scatter candy bar pieces or chocolate chips over the hot toffee.  Wait for two minutes, then spread the now-melted chocolate evenly over the toffee.
