Party Appetizers

Graduation
parties, wedding celebrations, Father’s Day barbecues – all special
occasions that usually involve food! Whether you’re the host/hostess
of the the event or are asked to “bring a dish to share”,
the following appetizer recipes are ideal. They’re easy to prepare,
don’t need special utensils for eating, can pass for casual or elegant,
and, of course, taste great!

Very Easy Black Bean Bites

1
can black beans, drained and rinsed
1/2 can whole kernel corn, drained
1/2 cup mild salsa
2 Tbls honey
1/2 tsp cumin
1/2 tsp oregano
1/8 tsp garlic powder

 Tostitos “Scoops”
sour cream (optional)

Combine black beans through garlic powder. Stir well and chill for about
an hour. Spoon into individual “Scoops”. Top with dab of sour
cream, if desired.

Yield: About 4 dozen scoops.

Tuna
Roll-ups


3 cans (3 oz.) white albacore tuna, drained
1/2 cup mayonnaise
1/4 cup pickle relish
1 tsp curry powder
1/2 tsp cinnamon

4 large spinach tortillas
mixed greens
shredded carrot

1. Combine
tuna through cinnamon and mix well. (OR make your own favorite tuna
salad mixture.)

2. Spread 1/4 of tuna mixture on a tortilla (stay in the middle – edges
will be cut off.)
Top with shredded carrot and mixed greens.

3. Roll up tortilla tightly and set aside. Repeat with remaining tortillas.

4. Store rolled tortillas in an airtight container and chill. Just before
serving, cut into 1 inch slices, cutting off and discarding “empty”
end pieces.

Yield: About 3 dozen slices.
