Donuts!
Recently my husband was craving homemade donuts. Cameron’s dream came true! He found a recipe, prepared the dough, and cut out the donuts. (NOTE: we used butter instead of shortening in the recipe.) While they were rising, he made the regular icing, according to the recipe, and I mixed up some chocolate frosting (yes, I had to have chocolate!) I manned the frying aspect in a large skillet on the stove. Cameron dipped (both sides of) the hot donuts in the icing and set them on a rack to cool. He tossed the donut holes with sugar and cinnamon in a small paper bag. We were quite the team! I ate waaaaay too many donuts that night, but they were so good.
Cameron’s advice for storing – place donuts in an airtight container and keep them in the refrigerator. (He actually likes them better this way.)
My chocolate icing:
1 oz. unsweetened chocolate
2 Tablespoons butter
1 cup powdered sugar
1 Tablespoon milk
1 teaspoon vanilla extract
1. Combine unsw. chocolate (preferably chopped) and butter in a heat-proof bowl. Microwave on high for 30 seconds; stir until smooth.
2. Stir in 1/2 cup powdered sugar, then milk and vanilla extract. Stir in remaining powdered sugar. (Add more milk for desired consistency, if necessary.)
