Eskimo Pie

My mom fondly remembers this dessert from Christmas seasons when she was growing up.  It’s a light, delicate finish to a holiday meal.

2 egg yolks, beaten
1/2 cup milk
1/2 cup sugar
1/4 teaspoon salt
1 Tablespoon plain gelatin
1/2 cup cold water
1 cup heavy whipping cream, whipped
2 egg whites, beaten until stiff
1 teaspoon vanilla extract

Crust:
Crush 10 graham crackers and combine with 2 Tablespoons melted butter and 2 Tablespoons brown sugar. Press into the bottom of a pie pan. Set aside.

Dissolve gelatin in cold water. In a double boiler, cook beaten yolks, milk, sugar, and salt until slightly thickened (coats back of metal spoon). Remove from heat and stir in dissolved gelatin. Cool. Fold in whipped cream, egg whites, and vanilla. Pour mixture into crust. Chill at least two hours.

Note: If you are wary of using raw egg whites, powdered egg whites (or meringue powder) are available and can be used in this recipe.
